Crockpot White Chicken Chili
I am always looking for quick, easy and healthy meals to cook on the go. I am obsessed with my crockpot because you can hardly mess it up! Most recipes are dump and go! A few years back I was visiting my sister and she cooked a delicious White Chicken Chili. I have never forgotten it and now I can share it with you. Enjoy!
Crockpot White Chicken Chili
Materials
- 1 1/4 pound Boneless Chicken Breast
- 2 cans 15 ounces White Northern Beans
- 1 can 15 ounces White Corn or yellow corn
- 1 can 15 ounces Chicken Broth
- 1 can 10.5 ounces Cream of Chicken Soup
- 1 can 4 ounce Diced green chilies
- 1 package Taco Seasoning
- 1 tsp Black Pepper
- 1/2 Cup Sour Cream or 1 package of cream cheese
- 1 Cup Shredded Pepper Jack Cheese or Mozzarella

- Layer the beans and corn on the bottom of the slow cooker pot.
- Place the chicken on top of the beans and corn.
- In a medium bowl, stir together the chicken broth, chicken soup, green chile peppers, and taco seasoning.
- Pour the broth mixture over the chicken in the slow cooker pot.
- When the chicken is cooked, stir in the sour cream and shredded cheese, leaving the cheese to melt for three to five minutes.
The options with this recipe are endless and the beauty is it is hard to mess it up! If you do not have sour cream, you can use 1 package of cream cheese. You can use any type of shredded cheese you want even mixing them up and using two different flavors. If you like it hotter you can switch up your green chilies for jalepenos or different peppers.
I recommend slicing your chicken up into cubes so it is easier to eat. You can adjust the flavor by adding in additional spices like black pepper, garlic and onion powder. Enjoy your chili with tortilla chips or a slice of some corn bread! Let me know if you try it!
